The Ciel does not possess any Cabernet Sauvignon in the blend. The wine exhibits hints of damson plum skin, smoke, cardamom and cinnamon. As the wine opens up a secondary layer of minerality reminiscent of river stones emerges. There is a light sense of earth combined with a spiciness that lends itself to a very complex mid palate. - Lushly aromatic and toasty, the substantial oak flavors are set against deep, brambly berry and cassis fruits. There are subtle suggestions of mint and some alcoholic heat, and an interesting orange peel scent carries into the mouth. The tannins are big and ripe and not at all bitter or too heavy.
- The Columbia Valley is wonderfully suited to ripen Cabernet Sauvignon, and Ciel du Cheval Vineyard on Red Mountain gets it right every year. Experience a bouquet of cassis, raspberries, and vanilla. The palate is dense and balanced with notes of black currant and chocolate. Polished tannins frame a lengthy finish.
- Full bodied with black currant jam, honey glazed dates and black peppered seasoned T-bone steak aromas intertwined with piercing boysenberry, rosemary rack of lamb, balsamic, blue cheese, bacon wrapped figs and intriguing tannins extended out over an intricate and balanced finish.
- Very, very few wineries make pure varietal Counoise, and none any better than this outstanding example. Tasting a bit like Grenache, a bit like Pinot Noir, but different from either, this fresh wine bursts with berries and tongue-tickling acidity. A hint of vanilla cream runs through the finish.
